Red wine is the drink resulting from the fermentation of the juice or must extracted from black grapes or reds in which it is imperative that there is maceration of the skins in the must in order to assign color and flavor to the drink. The pulp of the fruit, both white and black, is light, when pressed, this pulp gives rise to a cloudy juice considered “white”. The color of the wine is obtained according to the way the grape skins are used. To make red wine it is necessary that the skins of black grapes rest in the must, which is called maceration . The intensity of the color in red wine depends on two factors, first of the type of grape used in its manufacture and second of the time of maceration of the skins in the must.
The white wine is wine with colors ranging from pale greenish-yellow more even deeper golden-amber. It is produced by not allowing the skin of the grapes to ferment with the wine, as it is the skin of the grapes that gives the dark color of red wines.
Sparkling (or sparkling ) is a wine type that has a significant level of carbon dioxide , making it bubble when served. Carbon dioxide results from natural fermentation, whether it is made inside the bottle ( Method champenoise ) or outside it ( Method Charmat ). [ 1 ] The bubbles of CO 2 that form during the service are called perlage . In some parts of the world the word champagne is used as a synonym for sparkling wine, which is even prohibited by some legislation.
